Their new Autumn Grain Salad is loaded with a satisfying textural array of wholesome ingredients and comes with a tangy vinaigrette to tie each bite together, and even better? This sturdy pre-made salad makes great lunches, since it doesn’t get soggy like a salad made with lettuce would.

Costco members (sign up here) have been blessed with a lot of mouthwatering munchies this fall, from sweet cinnamon coffee cake bread to savory meatball sub sandwiches, putting this Autumn Grain Salad in good company. Costco’s new salad, which can be found in the Costco deli area, is made with bulgur wheat, mung beans, chickpeas, butternut squash, raisins, currants, and sunflower seeds, all dressed with a tangy Champagne vinaigrette. That means it provides your body with whole grains, plant-based protein, fiber, and plenty of vitamins, which is why it’s such a great mid-day meal.

The salad is delicious as a stand-alone vegetarian meal, but you could also enjoy it as a hearty, healthy side dish to your favorite fall comfort foods that might be lacking in nutrients, to help balance things out. Also, are we losing it, or would this be a delicious stuffing for a roasted chicken or stuffed pork chops?
